Well if the home made proxy does work, start using gmail or some other form of email. I don't know why this guy is reading your personal emails, but if all else fails you should just try talking to him, hopefully this guy isn't to big of a control freak and will allow you the privacy.

No you're right, but here is the thing, if he has access to his email, he is going to have full blown access to his computer, it isn't hard to see what someone types. It would also be easier for him to just use a completely different email service all together.
