gaskets and hoses, as many as you can get to and can afford. i used oem gaskets for head gasket, egr cooler, throttle body, turbo oil return. other than those, i used an eristic gasket set i got on ebay for $40.
if you can afford it, have the head professionally cleaned at a machine shop...
you should be machining the head and block anyway for a MHG. and when you machine the block, you should machine the rear timing cover at the same time.

seems to me you may also want to check the AFM. your symptoms sound like the way the car would drive with the AFM unplugged: limited to 3000rpm, limited in how much the throttle will open before car bogs down, and running rich condition to compensate for unknown air volume (fuel calculations...
if you dont find coolant dripping out onto the ground, then it is likely a blown headgasket and you are burning the coolant you are losing. do you ever see white smoke coming out of your exhaust pipe?
go bigger if you are gonna do other supporting mods, namely fuel system upgrade (pump, afpr, wideband o2) and air metering upgrade (lex afm or maft pro or standalone). otherwise stay with the 440s.
and an inch of oil in every cylinder? well at least your rings are sealing the liquid oil in...

had the a/c coolant temp sensor and the gauge cluster sensor switched.
fixed, and now i have a temp gauge! also did some research about oil pressure and i guess im dead on with ~5 at idle and 40 at 3000rpms.
next problem: no a/c and no heat. hitting the a/c button doesnt seem...

well, i got the tank in and connected everything up.
cranked the engine and it started right up! threw a code 51, which led me to inspect the TPS. discovered i had forgotten to plug it in! ;) plugged it in and code 51 went away. Was able to get the timing set and the motor is purring...
