tuning JDM 7mge (w/ turbo electronics)

Hey everyone, I know I am most likely going to be flamed for some of the stuff I am / will be doing right now at this point in my supra tuning.. or car tuning lifestyle for that matter. I do not have a Wideband sensor and guage. So as of right now I will have to rely solely on Narrowband and my greddy EGT sensor. I have swapped in a JDM 7mge into my car, I am running all the turbo electronics currently (440's, igniter, ECU, harness, CPS, Coilpack, AFM) JDM Apex-I 5-knob SAFC, Greddy Peak/hold EGT guage, Ajusa HG, ARP studs torqued to 80ftlbs, OBX Header / Downpipe, 2.5" exhaust, Apex-I N1 muffler, HKS SMF intake, and the Honda Intake pipe Mod. I have finally got her on the road. she idles nice, but when I get on the throttle I think the car is going super rich, seems to "bog" down even at around 3k rpm, my EGTS are staying right around 300C. I am running stock timing at 10 deg. BTDC, so I shouldnt be seeing cooler EGT's due to retarded timing correct? I thought my EGT's should be a tad bit higher, Tommorow I will be checking voltage across Vf and E1 to monitor what the 02 sensor is telling the TCCS to set fuel trim at, I guess my main question is this.. Lets say for example I hit 3k rpm, and I check voltage and I am getting 5v, that means the motor is possibly lean, and the ECU is going Max rich correct? so then I dial some more fuel into that RPM range by means of my AFC, and do another run.. can I slowly get the computer to be "stoich" or am I just not understanding all of this? any info would be helpful, please no garbage about the lightshow A/F guages.. I know, I know.. but right now I cannot afford a WB.. I will get one hopefully in a few months. until then this is what I have to work with. Thanks in advance.
