low idle problem/cool water temp

Every now and then i will be driving and i will come to a stop, and i notice my car making slighlt more small vibrations and i look at the tach and the car is sitting at just above the 500 rpm mark. This is usually after a steady cruise or if the engine is rather warmer than if i was just stop going around town. I have a new thermostat and coolant in there, and i am tapping my water temp gauge off right from the coolant neck just behind the t stat, and when cruising around i have a temp of about 175 and when im idleing/ stop and go it goes to about 180. Thing is, i bought a 196 or something thermostat and im wondering why its not staying that hot, well i replaced that thermostat under warrenty and put a different brand same temp in and still get the same water temperatures. I went to verify this with an infrared temp gun and the readings matched the gauge fine right on that coolant neck, but it seemed that if i moved the beam down to around where the lower hose connects the the engine, i was getting a good 190's reading. My question is why is the water cooler at the top neck where the thermostat is, it doesnt make too much sense. And about the idle, i have another issue with lowidle oil pressure(which im trying to solve in a different thread at the time) so when idle goes down to 600rpm its really not helping the matters. My oil pressure sometimes reads 0 on my gauge and has me pretty worried. Thanks for any help.

Edit, i forgot to mention this ide problem really doesnt happen all the time, it just seems to happen someitmes, especially when i let the car sit at idle for a while when its hot, itl gradually go from normal idle down to too low

Yes, i have an aftermarket gauge, and i read a post somewhere that stated the ecu gets an input from the pressure sensor but it can "live without it" so its currently just unplugged. Another question i have, where are other threaded ports i can tap into for oil pressure? Ive looked on the block near the other one, and there seems to be a plug in the block right under the exhaust manifold near the end of the engine, but it seems like it might be for coolant.
