Best tire and size?

So, I'm pretty sure I'm picking up 2 rims off a guys 94 mustang gt. I am buying these to put some sticky tires on for the track and street.

They are 16's. So, what is the best size tire for this rim? I want to fit as much in there as possible with the most sidewall...

Also, I've narrowed my choices to ET streets, ET street radials, and Drag radials. Which tire works best for a Mark 3 7M?
My buddy said radial tires aren't a good choice for manual tranny cars bc radial tires don't like the shock that manual tranny cars produce on a launch. I dunno if that true, so I thought I'd come on here and ask the experts.

I've heard alot of good things about those MT ET Street radials....

Edit: I noticed MT makes a 255/50/16 tire. That seems like a perfect fit. Says rims width from 7.0-9.0... Just need to know if this tire will work or not...

your car looks too low for a 255/50 (going to rub). MT makes a dr in 10.5/26/16 (10.5" wide, 26" tall and 16" rim) I'll be looking at these when I need them.

It sits higher now, those pics are with the old springs and they sat lower.

A lot of people run those on stockers around here it seems. That's what I'm picking up in the spring for my car too. They fit pretty well.
