Welcome to supramania! Search around, there's tons of info on weight reduction, but not specifically for SCCA rules. The most you could remove is about 350lbs with out removing the bumper supports and door bars. You also said you can't replace the glass, so make that about 230lbs :D IMO...

i've owned one 87t, one 88t, one 91t, and one 89t which was in mint condition. the 87 was my first, the 88 and 91 were pretty much daily drivers/parts cars, and the 89' was the beast.
