The only non-Toyota gasket set I would use would be Ajusa or Ishihara-Johnson. They are the OE gasket set manufacturers for a lot of car companies. After all, do you really think that Toyota makes their own gaskets? IIRC Ishihara-Johnson are the ones you'll get if you buy from Toyota...

I'd pull the dash and check out the heater core. The heater pipes just press into each other, it could be leaking at the junction.

I did my downpipe, same method described as everyone above. There's no real method, just take your time, do it slow, and overlap a lot. It will move over time, so get it on there good.. pull real tight, wear gloves. I just used stainless steel hose clamps at both ends of the downpipe.
