Had relatively the same problem with my car. I would have to add coolant every 4-5 days but not a gallon though. Turned out my thermostat housing was leaking ever so slightly and had to be rebuilt. Check that maybe?
I definitely plan on doing it right the first time. I don't plan on going JZ-Series either. I'm sticking to the 7M. I just love the deep sound of it when you're cruising at ~3K RPM along with the low-end torque of it.

Sorry everyone if I annoy them by reviving this thread. But GOD DAM your car is beautiful. Took me a day and a half (off and on) to get through all 134 pages and loved every bit of it. Hopefully one day my 89 can be somewhat as nice as this car.
Mine did this not too long ago. Just like CyFi6 said check that EFI fuse. When mine did this, I just swapped the 15a EFI fuse with another one in the fuse box, reconnected my AFM plug, and checked all the plug wire connections and she fired right up.
Though, mine did do this for a couple weeks...
