what are the differences between the hot wire, pressure, flap and karman sensors, which is used in the 1jz and what do the sub menus for each sensor do? thanks

The 1jz you need to use the pressure(for map sensor) setting. the 7mgte uses karman vortex (air flow meter) it uses freq. Hot wire is another type of air flow meter that measures air flowing across a heated wire in the airflow meter.The more air the cooler the wire . Domestics use this alot.Hope this helps.

If i remember right the gte afm is karman vortex, uses air passing through and a reflective type mirror.

This is Wrong.
First, it's AFM.
Second, GTE does use Karman.

Say what? The Karman Vortex is used in the 7MGTE as pointed out, and the Vain Airflow Meter is used in the 7MGE.
