The sensor case is the other wire, so it is possible to measure a resistance, but that would not be the normal way to test them as they are basically a microphone.
Basically, when hooked up to an O-scope, you're looking for voltage output when the sensor detects knocking sound in the 7khz range. You should be able to imitate that by tapping the block.
