You don't need to add any fluid to the trans while its out. Just drop it in, then put fluid in there, start the car, let it run on a flat surface then check trans fluid. Add if needed. You don't even need to add fluid to the converter before putting back in either.
I have never heard of removing the rear crossmember to get the trans out.

7mgte swap = easiest and cheapest and probably the most reliable option right now for you ( assuming the motor/trans is in good condition...HG replaced and properly torqued)
