I'm with Cy, check all your connectors and vacuum lines. For the heck of it check your codes, it might shed some light as to what's going on.
90% of the time when it's not getting up to temperature probably it's due to the thermostat. Check and see if it's opening early. OEM thermostats start opening @ ~180* F and are fully open @ 195* F if I recall correctly.
I'd start by retorquing your bolts on your subframe/suspension. That gets overlooked by a lot of people. If you've got a grinding noise may want to check wheel bearings.
Yeah, the big speed bump on going to 2J for a lot of people is also the inital cost of the swap. Even if you're starting with a blown 7M, it's still much cheaper to source a 7M than a 2J with all the bits necessary for a swap.

Just figured I'd let people know the solution. Blower motor was dead. After further inspection I could see pieces of broken copper inside the small hole where the rubber tube attaches. It was incredibly simple to replace. Here's how to do it.

Waterfall noises aren't necessarily a blown head gasket, just a coolant leak. You could have a tiny pin hole leak or hose that's just barely not tight enough that you don't even see drips on the ground. Check inside your overflow and see if there's oil in your coolant and/or crack the oil...
