Theres no such thing as a crush type rivet, but the newer gaskets dont have issues with being crushed, make sure its actually holding it up before you pull the head. If you are removing the radiator cap when the coolant is warm, coolant is going to come out as its under pressure unless its cold.

Im using an NA spec stage 3 6 puck sprung clutch with my w58/w58 flywheel and 7mgte with stock boost/intake/exhaust and i have no slipping problems at all. The clutch pedal feels almost stock as well, though i do have some chatter sometimes on engagement.

I would trust a mechanical gauges accuracy over electric any day. If you dont mind running a tube, go mechanical in my opinion.
