I think i see what you mean, but those triangular ports labeled as oil channels on that picture are just coolant passages, and my gasket has only the intake side cut out as well, i figure its part of the design.

There's no issue with re-using the stock bolts. Use them if you are going with a stock head gasket, just make sure you inspect them for damage, make sure the bolt holes are clean and aren't full of water, and coat the threads lightly with oil before putting them in and torqueing them.

Journals seem a bit under sized, try plastigauging the cams. If you have the valves in it, you can put the plastigauge on the underside of the journal so the valve spring pressures dont squish it.
