Overheating on a 87 7M-GE

I have an 87 7M-GE non-turbo automatic that I picked up for 500. I replaced the timing belt, cam seals, exh and int man gaskets, VC gaskets, cap, rotor, plugs, wires, down pipe gaskets, flushed the system, new t-stat, waterpump and back to an original toyota radiator. And I tried to burp the motor and get all the air out but is still seems to have air in the coolant. I was thinking the next thing is headgasket. The car runs great and than the temp starts to rise then drop to normal than spike to red line when it gets like that I checked the upper rad hose and its hard as a rock and no coolant flow. Should'nt the t-stat be open when its hot? and flowing? its almost like I have the stat in backwards. If anyone could give me some insite it would be helpful. THANKS
