I will max out any sport bike (motorcycle) if given the chance, the right conditions, and the right road because I think they are much more stable than cars.
That thing I just seen -- no way.
I don't recall seeing a steering dampener on it.
The wheels are too light and don't contribute enough to the stabilizing gyroscopic effect that helps keep a bike straight.
All the things that make a sport bike (motorcycle) handle like sport bike are not present in that bicycle.

He is lucky he didn't mess up badly, because that is what I was expecting on such an experiment.

Actually, Tony, the wheels on a bicycle do give you a fair bit of the gyroscopic stability you get on a motorcycle. And steering dampeners are also available for them - otherwise the racers doing 80km/hr over rocks the size of your head would have serious issues. :)

That said... I agree that this doesn't look stable or safe enough to ride.
