wheel offset calculator. use this to see if a particular offset will fit.

wheel and tire bible. a ton of info on wheels and tires in general
http://www.carbibles.com/tyre_bible.html
this page includes:
tire size calculator. (about halfway down the page) see how far off your speedometer will be with a different size tire.
ideal rim-width calculator. (about halfway down the page) to see how wide a tire you can fit on a particular wheel.

note: the calculators are for refference only as every manufacturer could have different recommendations on rim width. http://www.tirerack.com usually has the official recommended rim width specs for each specific tire.

You beat me to it! ;)
but I can add that the stock MK3 has

Bolts that are 12mmX1.5
& a Centerbore of 60.1mm

The centerbore of new wheels must be
EQUAL TO OR GREATER THAN THE CAR
otherwise it won't work.

If centerbore of new wheels is more than original, buy hubcentric rings.

I belive the stock offset for MK3's is +35mm, not +37mm.

Edit: On second reading.... I found a lot of +37 numbers so I am most likely wrong about +35.

One other note, the 5x114 is 5x114.3, and that I am quite sure about!
