how do i know if i have a blown head gasket, the car starts, idles and is times but when i drive it doesn't do it hesitates and doesn't even pick up. or is it something else.

some of the tell tail signs of a bhg are gurgling in the dash (waterfall noise), air pockets in the coolant, coolant or oil mixing (in either the oil pan or in the radiator, creamy foam in oil fill cap, or white smoke from the exhaust. if you have any of these it may be time to do a leakdown test to further diagnos good luck.
It sound like you need to check for a lot of other things as well as checking for a bhg. I had a similar issue it was a bad maf
